A sweet, creamy treat that’s as easy as it is irresistible! This Strawberry No-Bake Cheesecake features a crisp cookie crust, a luscious blend of cream cheese, whipped cream, and strawberry gelatin, and a crown of fresh strawberries. Perfect for summer gatherings or anytime you want a show-stopping dessert—no oven required. Just chill, slice, and enjoy a burst of berry bliss in every bite!

Ingredients

  • 2 cup Crisp cookies of your choice (coconut cookies will give sweet flavour but honey graham crackers will work fine too) (10 oz)
  • ½ cup Butter
  • 24 oz Philadelphia cream cheese (3 packages (8 oz each))
  • 1 cup Heavy whipping cream
  • 1 ½ cup Strawberries
  • 3 oz Strawberry gelatin

Instructions

  1. 1Crush the cookies in a plastic bag using a rolling pin until they are finely crushed.
  2. 2Melt the butter in a saucepan over low heat and mix in the crushed biscuits until well combined. Press the mixture into the bottom of an 8-inch springform pan to form the crust. Refrigerate for about 20 minutes.
  3. 3In a mixing bowl, beat together the powdered sugar, heavy cream, whipping cream, and cream cheese until smooth and creamy.
  4. 4Prepare the Strawberry Gelatin according to package instructions, let it cool, and pour into the batter. Mix until all ingredients are fully blended.
  5. 5Spread the cheesecake mixture evenly over the biscuit crust. Place whole or diced strawberries on top.
  6. 6Refrigerate the cheesecake for at least 4 hours, or until set.
  7. 7Serve chilled. Enjoy your delicious no-bake strawberry cheesecake biscuit.

Notes

  • Cookie Options: Try coconut cookies for a tropical twist, or classic graham crackers for a familiar flavor.

  • Strawberry Gelatin: Let the gelatin cool before mixing it into the batter to avoid melting the cream mixture.

  • Fresh Strawberries: For the prettiest presentation, use ripe, firm strawberries and slice just before serving.

  • Chilling Time: Overnight chilling gives the best texture and flavor, but a minimum of 4 hours will work in a pinch.

  • Make Ahead: This cheesecake is perfect for making a day ahead—just keep it covered in the fridge until ready to serve.

  • Serving Tip: Run a knife under hot water and wipe dry before slicing for clean, beautiful pieces.

  • Crust Variations: Swap in chocolate cookies or digestive biscuits for a different flavor profile.
